Without a doubt the Access XXXX Developer Handbooks (two books; Desktop & Enterprise) published by Sybex
There have been various authors over the years, But Litwin, Getz & Gunderloy are to blame for my copy.

Microsoft Access 200x Bible by Cory N. Prague and Michael R. Irwin. It's dog-eared and held together with duct-tape at this point which should tell you how much I used it.
