Does anyone have any document or link to the document on How to install and configure DB2 ver 8 EEE on multiple nodes of SP2 .

Also is there any diiference in administering EEE on multiple nodes and EE on one node? Any links / docs ?

If you are looking for documents, I suggest you look for DB2 ESE (with the Data Partitioning Feature license enabled), which is the new version 8 name for DB2 EEE version 7.
