XML or XHTML?? AJAX is pushing me...

If I'm going to be displaying products from a MySQL database, why shouldn't I just create a while() loop into a table with a pre-determined template/css sheet? Is there a benefit to pushing the files into XML format and injecting them into the XHTML page? I'm trying to see the benefits... any ideas?
