Can anyone please tell me if Oracle uses only one Index per table at a time?

    I think no.
It depend on what need to be retrived, if index is present for being used for that perticular condition & which index optimizer utilizing for that situation.

a table can be used twice in a query & two different indexes can be used for same table depending on situation.

Usually Oracle uses only one index per statement per table ("best fit". However when BITMAP indexes are present Oracle can use more than one index for a single statement
